The great thing about chili is its ability to warm you from the inside out. From your first bite to your last, this chili will excite your taste buds with the flavors of sweet tomatoes, nutty beans and it’s gentle smokiness. Our chili is slow cooked with fresh carrots, onions, garlic and corn. The melding of the spices and vegetables over time is what creates its complex flavors.

Chili to me means friends and family. Almost never eaten alone, perhaps because it’s made in a big pot, chili brings people together. I adore the festive atmosphere associated with this dish. I find a bowl of chili so gratifying and warming, made even better with the addition of smoked paprika for that just off the fire flavor.
While you’re waiting for your food to rehydrate why not warm your insides first with a small nip of a good Mezcal. This will pair perfectly with our chili. Mezcal is a spirit made from the agave plant the same plant used for Tequila. Traditionally it’s roasted which imparts a sweet smokiness. Another smoky option would be a good old American bourbon. Both are light and lean and easily carried in and out.
